How much ice does a hotel need?

Size each ice zone separately, then add them up. Manitowoc's published rules of thumb are a good starting point:

Then add 10-20% for summer peaks and pool days, and size against the machine's 90°F air / 70°F water output, not the headline rating. Peak occupancy matters more than average occupancy. Our hotel ice machine buying guide covers zoning in more detail.

Worked example: a 150-room select-service hotel

Guest ice: 150 rooms x 5 lb = 750 lb/day. Split across three ice stations, that is about 250 lb/day each, plus 15% for summer = about 290 lb/day per station.
Breakfast area: about 100 lb/day from one countertop ice and water dispenser.
No full restaurant or bar.

A good fit is three 300-350 lb/day dispensers or head-and-bin stations on the guest floors, such as the Hoshizaki DCM-300BAK-OS or a Manitowoc IDT0300A on a bin, plus one small dispenser for breakfast.

Which ice type for which hotel area?

Guest floors: full or half cube for buckets; cubelet or nugget from a dispenser.
Restaurant: full, half or crescent cube for water, tea and soft drinks. See crescent cube ice machines.
Cocktail bar: dense cubes, plus a specialty large cube or sphere maker for spirits.
Food display and seafood buffets: flake ice.

Placement, noise and sanitation

Keep guest-floor machines out of rooms that share a wall with sleeping rooms. If heat and noise are a problem, choose a remote condenser model.
Fit every machine with a water filter. It improves taste and clarity and protects the evaporator.
