Why bars pay for large ice

A large cube has less surface area per ounce than small ice, so it melts more slowly. That keeps a whiskey or an Old Fashioned cold without watering it down. The cubes are also clear and solid, which looks premium in a rocks glass and lets a bar charge for it. Hand-cutting the same ice from blocks takes staff time every shift. A machine does it automatically.

Model Ice shape and size Rated output (70/50) Built-in bin Width Power
Hoshizaki IM-50BAA-LM Large square, about 1.9 x 1.9 x 2.3 in. 50 lb/day 22 lb 19.75 in. 115V, NEMA 5-15 plug
Hoshizaki IM-50BAA-Q Sphere, about 1.8 in. (about 500 spheres/day) 50 lb/day 36 lb 24.75 in. 115V
Hoshizaki IM-200BAK Square, about 1 x 1.25 x 1 in. 186 lb/day 75 lb 39.5 in. 115V

Which one fits your bar?

  • Spirit-forward cocktail bar: the IM-50BAA-LM's 2-inch-class cubes are the standard for an Old Fashioned or a Negroni on the rocks.
  • Whiskey bar or steakhouse: the IM-50BAA-Q's spheres make a strong visual statement for neat-pour upgrades.
  • High-volume bar that wants clear ice in every drink: the IM-200BAK makes smaller square cubes at almost four times the output. It suits shaken drinks, highballs and soft drinks.

How much large-cube ice do you need?

A specialty machine is usually a second ice source, not the main one. Count the drinks you serve on a large cube or sphere on your busiest night. Plan one cube or sphere per drink. At about 500 spheres a day, the IM-50BAA-Q covers most single-bar programs. Keep a standard cube machine for the well, shakers and soft drinks. Installation notes

Specialty ice machines form each piece individually and use more water per 100 lb than standard cubers. Plan for:

  • A potable water supply with a water filter; filtered water gives clearer ice.
  • A gravity drain. The IM-50BAA-Q uses a 3/4 in. drain.
  • Front-in, back-out airflow (both 50 lb models), so the front grille must stay clear.

Frequently Asked Questions

What is a large cube ice maker?

A large cube ice maker is a specialty machine that makes oversized, clear ice for cocktails and spirits. The Hoshizaki IM-50BAA-LM, for example, makes solid cubes about 1.9 x 1.9 x 2.3 inches, up to 50 lb per day, and stores 22 lb in a built-in bin.

How big are the cubes from a commercial large cube ice maker?

Sizes vary by model. The Hoshizaki IM-50BAA-LM makes cubes of about 1.9 x 1.9 x 2.3 inches, the IM-50BAA-Q makes spheres of about 1.8 inches, and the IM-200BAK makes square cubes of about 1 x 1.25 x 1 inch.

Do sphere ice makers make clear ice?

Yes. Commercial sphere machines like the Hoshizaki IM-50BAA-Q form each sphere individually, which produces clear, solid ice instead of the cloudy ice from a home mold. Filtered water and regular descaling keep the spheres clear.

How much large-cube ice does a bar need?

Count one cube or sphere per specialty drink on your busiest night. A machine making about 500 spheres a day, like the Hoshizaki IM-50BAA-Q, covers most single-bar cocktail programs. Keep a standard cube machine for shaking, the well and soft drinks.
