What flake ice is good for
Flake ice is thin, irregular chips of ice made by freezing water on a refrigerated cylinder and scraping it off with an auger. It is soft and moldable, so it packs around products, spreads in an even bed and cools items quickly through full contact.
| Use | Why flake works |
|---|---|
| Seafood displays | Molds around fish, keeps the surface cold, looks fresh and full |
| Produce and deli cases | Even bed under and around products |
| Salad bars and buffet wells | Packs into wells and holds pans level |
| Healthcare | Cold packs, therapy, specimen transport; soft enough for some patient uses |
| Labs | Sample cooling in ice buckets and trays |
| Bakeries and kitchens | Cooling dough water and blanching shocks |
| Bars | Juleps, swizzles, tiki drinks and other crushed-ice cocktails |
Flake ice is not the best choice for everyday drinks, where it melts quickly. For chewable drink ice, see undercounter nugget ice makers. Compare all three soft-ice types in commercial crushed ice machines.

Specifications from each product page. Scotsman lists water use of about 12 gallons per 100 lb for the whole UF series.
What the comparison shows
- Best hot-day output: the Manitowoc UFP0350A keeps 82% of its rating, making 328 lb/day at 90/70. The UFP0200A keeps 77%.
- Most flake ice per inch: the Scotsman UF424AX-1 makes 440 lb/day rated (310 at 90/70) from a 24-inch cabinet, with the biggest bin here (80 lb).
- Narrowest: the Scotsman UF0915AX-1 and UF1415AX-1 fit a 15-inch opening. The UF1415AX-1 makes almost 50% more ice in the same cabinet.
- Efficiency: Scotsman's larger UF models use less energy per pound, from 5.75 kWh (UF0915) down to 4.20 kWh (UF424).
Important: 50Hz models
The Manitowoc UFK0200AZ and UFK0350AZ are 230V / 50Hz configurations for markets with 50Hz power. U.S. and Canadian buildings use 60Hz. For a standard U.S. installation, choose the UFP0200A or UFP0350A, which run on 115V / 60Hz.
How much flake ice do you need?
Flake ice is light. A common planning figure for salad bars is about 30 lb of ice per cubic foot. Use it to size a display:
Example: an 8-foot seafood case. The ice bed is 8 ft long, 3 ft deep and 3 inches (0.25 ft) thick: 8 x 3 x 0.25 = 6 cubic feet. At 30 lb per cubic foot, the first fill takes about 180 lb. Most stores then top up through the day and replace the bed daily, so plan for about 200-250 lb a day. On a hot day the Manitowoc UFP0350A (328 lb/day at 90/70) or Scotsman UF424AX-1 (310) covers it. A UFP0200A (198) would be stretched.
| Application | Daily flake ice | Suggested model |
|---|---|---|
| Bar making crushed-ice cocktails | 50-100 lb | UF0915AX-1 or UF1415AX-1 |
| Salad bar, 10-15 wells | 100-150 lb | UF1415AX-1 or UF2020AX-1 |
| Clinic, lab or therapy room | 60-150 lb | UF1415AX-1 or UF2020AX-1 |
| Deli or produce display | 150-200 lb | UF2020AX-1 or UFP0200A |
| Seafood case, 6-8 ft | 200-300 lb | UFP0350A or UF424AX-1 |
Above about 330 lb a day on a hot day, step up to a flake head on a separate bin. See industrial flake ice machines.
Bin size and access
Flake ice is bulky, so a "pound" takes up more bin space than with cubes. That is why the larger machines here have 57-80 lb bins. A few practical points:
- Scoop access: check the door style. A low, wide door is easier when filling buckets or bus tubs.
- Rush periods: at opening time, a seafood counter can use a whole bin in minutes. Start the machine early, or add a second machine for the morning fill.
- Drainage: flake ice melts faster than cubes, so the bin drains more water. Make sure the drain line is sized and pitched correctly.

Running costs
At 200 lb of flake ice a day and $0.15 per kWh, the Scotsman UF2020AX-1 (4.63 kWh/100 lb) uses about $510 a year in electricity, and the UF424AX-1 (4.20) about $460. Water use is about 12 gallons per 100 lb, much less than a cube machine of similar output. See our operating cost guide.
Installation
- Space: measure height with legs. Most models here are 37-1/2 to 39-1/2 inches tall, taller than a standard 36-inch counter.
- Power: a dedicated 115V / 60Hz circuit (U.S. models).
- Water: a cold potable line. Flake machines use an auger, so scale control matters. Use a water filter with scale inhibitor.
- Drain: a gravity drain below the machine; flake bins drain more water than cube bins.
- Air: keep the front grille clear and avoid hot spots near ovens or fryers.
See our installation checklist.
Food safety
Ice that touches food is itself a food. Clean and sanitize the machine and bin on the manufacturer's schedule, use a dedicated scoop stored outside the ice, and don't put returned display ice back in the bin. For seafood counters, follow your local health code on ice handling and drainage. Our guide to flake ice for seafood displays covers display practice.
Flake ice in healthcare
Hospitals, physical therapy clinics and sports medicine facilities use flake ice because it molds around joints and limbs in ice packs and cools evenly without hard edges. Specimen transport and lab use follow the same logic: flake packs around tubes and containers. A 15- or 20-inch Scotsman UF machine in a therapy room or nursing unit keeps ice at the point of care. For patient drinks, nugget ice is usually preferred. See healthcare ice machines.
Flake ice behind the bar
Several cocktail families are built on finely crushed ice: the mint julep, swizzles, cobblers and most tiki drinks. Flake ice frosts the glass quickly and packs tightly. A 15-inch Scotsman UF0915AX-1 or UF1415AX-1 behind the bar replaces a manual ice crusher or a mallet and canvas bag, and saves time during service.
Undercounter flake or a flake head?
| Undercounter flake (this page) | Modular flake head on a bin | |
|---|---|---|
| Output | 96-440 lb/day | 760-1,250 lb/day |
| Storage | 36-80 lb, built in | Separate bin, several hundred lb |
| Space | One cabinet, 15-29 in. wide | Head on a freestanding bin |
| Best for | One display, bar or clinic | Seafood departments, processing, several displays |
If you need more than about 330 lb a day on a hot day, or large storage for a morning fill, see industrial flake ice machines.
Running costs and water
Flake machines are among the most water-efficient ice machines. Scotsman lists about 12 gallons per 100 lb across its UF series, against 20-35 gallons for many cube machines. At 200 lb a day, that's about 8,800 gallons a year, versus 15,000-25,000 for a cuber of similar output. Electricity at that volume is about $460-510 a year for the larger Scotsman models at $0.15 per kWh.
Common mistakes
- Buying flake for drinks. It melts fast in a cup; nugget is better.
- Ordering a 50Hz model. UFK models ending in AZ are 230V / 50Hz.
- Sizing in pounds without thinking about volume. Flake is bulky; check the bin.
- Ignoring height. Most units are 37-39 inches tall.
- No scale control. Auger machines wear faster with hard water.
Care
Clean and sanitize at least every six months, more often in seafood and healthcare use. Descale as the manufacturer directs and replace filter cartridges on schedule. Our maintenance checklist covers the routine.
