Why choose small cube ice?
Small cubes pack tightly in a cup, so they displace more liquid and chill drinks faster than full-size cubes. That is why fountain-drink restaurants, cafés and bars that serve soft drinks and blended drinks prefer them. Small cubes also fill bags and coolers evenly, and they blend more easily than full cubes. The trade-off is that they melt a little faster than a full cube. Compare the two in full cube vs half cube ice.
Watch the naming: Scotsman's "medium cube" is a full-size cube, not a small cube. If you want the Scotsman equivalent of half dice, look for model codes with SA (for example UC2024SAX-1).

Sizing: rated vs real output
Ratings are measured at 70°F air and 50°F water. In a warm kitchen, output drops. Scotsman's UC2024SAX-1 is rated at 227 lb/day but makes about 166 lb/day at 90°F air and 70°F water. Manitowoc's UYP0310A drops from 330 to 270 lb/day, and ICETRO's IU-0220-AH from 202 to 150 lb/day, under the same conditions. Use the lower number for your peak day.
When to look elsewhere
- More than about 350 lb/day: move to a modular half cube head on a separate bin. See all half cube ice makers.
- Full-size cubes for slower melt: see full cube ice makers or Scotsman's medium cube ice makers.
- Soft, chewable ice: see undercounter nugget ice makers.
- A small machine for light use: see small commercial ice machines.
